Quick and Easy Lamb Burgers/Pittas – even the kids can make them!
Quantity- 6-8 burgers.
Time- 20 min
Non Stick Frying pan or griddle
Ingredients
I have used all Sainsbury’s Ingredients
450g mince lamb
1x carrot grated
2 x tomatoes
4 x spring onions finely chopped
1tsp dried flaked chilli
Salt to taste
2 tbsp mint jelly
2 tbsp Breadcrumbs (optional)
For the kids I usually pop all the ingredients (not the mince) into a food processor to blitz everything – means the kids cannot see all the vegetables!
Method
- Place all the ingredients into a bowl and blitz. I just use a handheld blender.
Add the mince.
Using your hands mix all ingredients together.
Separate into 6-8 balls (this depends on the size you want your burgers to be).
* Remember the burgers will shrink slightly when cooking.
Flatten the balls into burgers.
Gently place the burgers in a non- stick pan on a medium-low heat. There is no need for any oils because there will be fat from the lamb. I have used low fat lamb too. This will take around 5 min. Remember to flip them over half way. They should become golden brown in colour. You will know when to flip them by watching the sides of the burger change colour form pale pink to a golden brown. Once half way, flip them over.
Let them rest for 2 minutes before serving.
I like to serve them in pitta bread with ribbons of carrot and cucumber. The family like it with a little mayonnaise too.
